When cut, the palm tree is around 3 meters high.
The part sent to the plant is reduced to a 60-centimeter trunk with an average weight of one kilo. This trunk still has its protective outer coat, which helps preserve the freshness of the hearts of palm.
Once the stalk reaches the plant, it is stored under refrigeration to preserve freshness and the last of the outer coat is removed. During the process, the last part of the outer coat around the stalk is removed and just the tender heart is used, which weight approximately 100 grams.
Because of the osmosis process, the tenderest sections are found close to the root of the palm, where the plant nutrients are concentrated. That is why the inside of the hearts of palm has a stronger flavor.
Section 1 – 2
This section produces a fine, delicately flavored product. This product has to be eaten directly from the jar in its different presentations.
Section 2 – 3
Extra fine quality: Very good appearance, thinner pieces, good texture. This piece has an exquisite flavor, delicate but tender, very pleasing.
Section 3 -4
Premium qualityThis section produces firm hearts of palm, with an excellent texture, and a flavor that is a little bit stronger than the previous section. Excellent for salads or for use in diverse dishes. Used for Premium 14-ounce presentations.
Section 4 -6
Used for the standard 14- and 28-ounce presentations.
Section 4 -6
Excellent texture and incomparable flavor. It is cone-shaped and has the strongest flavor in the palm and is where the characteristic fruit flavor is found (palm dates). At Demasa it is used for 25-ounce presentations.
Under 6
Used for extras and small chunks with an excellent flavor and texture. The chunks can be used as is in salads.
